Reasons
Here are the reasons I,and many others,believe that they could be a fantastic couple!
Knuckles seems to take care of his friends very much,after all,he used to be a very lonely guy on his Island. If he had a girlfriend,one could imagine the lengths he'd go to protect her.
After seeing how much Amy cares for Sonic,imagine all the attention Knuckles could get! Unlike Sonic,perhaps Knuckles would enjoy all the affection lashed onto him,and try to get even more of it.
Simply,most of us Knux/Amy fans go by the logic of 'Knight and Princess'.He could be her daring hero,and she would be his caring love.

You seem to have exhausted most of them, but here's several:
Red/Pink, very similar colours.
Other than her bangs, Amy has a very Echidna-ish hairstyle, all the other
hedgehogs have huge mohawk spikes.
Both rely on brute force by arm strength rather than ground speed or
spinning for their combat tactics.
Both can get rather hotheaded at times.
Knuckles relied on his Chaos Emerald powers, Amy on her Pika Pika Hammer,
without them one might wonder how useful they are without them.

In Sonic Adventure 2 battle, before Tails does the pyramid level,
Knuckles says, "They went into that pyramid and most inportantly I saw that
Bat girl go in there," Then he turns to Amy and says, "You saw them too
right?" ^_^ well, it's like, Sonic should've been with them too so then
why'd he ask Amy? Hint Hint! AND before Tails does the car chase level,
knuckles pops out of the sewer and Amy isn't afraid to just pull him out of
the way, I think they might have a secret relationship. Haha.
Other Pairings? (Please Note - I am not saying Knux/Amy is BETTER than these pairings. These are merely my thoughts on them. ) :
Sonic/Amy:
In the comics,Sonic seems to be Sally's guy,and in the games,trys to avoid Amy a lot of the time. Amy's crush is often seen only as fangirl idealism,so if she isn't careful,she could get her heart broken.
Sonic/Knuckles:
Now I'm not aganist yaoi(far from it!),but these two seem to be more rivals than lovers.They fight more often then they agree.
Tails/Amy:
Tails seems a little young for her,and Amy treats him like a little brother. The only thing they have in common is looking up to Sonic.
Tails/Knuckles:
Knuckles seems to get annoyed by Tails alot,although he does respect him. Tails admires Sonic more than Knuckles.
Shadow/Amy:
Shadow's angsty ways still cry for Maria(~I just met a girl named Mariiiiiiia!~) and Amy seems a little too hyper for him.
Shadow/Knuckles:
The angst these two would bring is overwhelming. They seem too stubborn to get along,and they don't really know each other that well.
Cream/Amy:
Like Tails,Cream seems too young for Amy,and I don't quite see many of the Sonic chars as lesbians.('Cept Lien-da,but that's another story.) I prefer Cream with Tails anyway,hee hee.
Rouge/Knuckles:
With Rouge always after his Master Emerald,and the constant fights and bickering,it's hard to see these two becoming more than stubborn freinds,there wouldn't be alot of trust.I see Rouge with Big,hoo hoo.
Tikal/Amy:
Considering it's near impossible,since Tikal is sort of a ghost now,and once again,I don't see any Sonic chars as Lesbians(again,I point to Lien-da.)this pairing doesn't seem well structered. Root for Tikal/Chaos!
Tikal/Knuckles:
Tikal is (although some would argue not)Knuckles great (etc) relative,so this would be like incest.Also the whole 'she is dead and a ghost thingy' rears its head again.
Julie-su/Knuckles:
They are also related(sorta) and seem to be more friendly than relationship material. The fact that she argues with alot of his friends doesn't help either.
